Most of us get our blueberries from the grocery store or farmers’ market. This year I had the pleasure of picking my own deep in the woods of Northwestern Ontario. Armed with bug spray & buckets, we ventured up the cabin road, found the perfect rock and assumed the “crouch” blueberry-picking position. Everywhere I turned there were more and more – what an experience!
We wasted no time and whipped up some muffins when we returned to the cabin. They made a quick snack for the travellers on the go.
Next morning we had a buffet brimming with blueberry pancakes. It took an oven full of pancakes to feed this clan and when the last of the syrup was gone, we got to work on project #3… the pies!
Never is a recipe so easy! I love blueberry pies but must admit I’d never made one before. Here’s the recipe that worked well for us:
Mix 1/2 c. sugar, 3 T cornstarch, ½ tsp cinnamon
Mix in with 5-6 cups blueberries
Pour into pie shell (we used frozen), dot with 1T butter
Add 2nd pie shell on top, pinch, brush with egg wash, make slits for steam to escape
Bake 50-60 minutes at 375 degrees. (All ovens are different…we were using a cabin oven)
